Cava D’Onice Rosso di Montalcino
By law, Brunello must age a minimum of four years, and even after release can need additional time in the bottle before drinking. To close the gap between harvest and release, wineries produce a “Baby Brunello”, Rosso di Montalcino. These wines are usually made from younger vines, and aged only a year before release. They are ready to drink, but will age well for 3-5 years, and offer exceptional value.
