Cava D’Onice

Founded in 2002, this is a small, family owned winery in Montalcino, producing approximately 4,000 bottles per year. The name Cava D’Onice translates to “Onxy Quarry”, as some of the early vines were planted near the quarry where onxy was mined to build the famous landmark abbey of Sant’Antimo, a UNESCO heritage site. One of my favorite places in Tuscany.
